Recipes and pairings SALTIMBOCCA ALLA ROMANA Recommended pairing MARCA ORO ROSÉ Preparation time: 10' – Cooking time: 10'Difficulty level: low INGREDIENTS FOR 4 PEOPLE: 8 slices of veal 8 slices of raw ham 50 g of butter 100 ml of white wine 10 g of sage 60 g of flour salt pepper The saltimbocca alla Romana are an appetizing second dish, typical of Roman gastronomy. The intense and genuine flavour of this dish can be paired with the freshness of a fine Spumante Rosé. METHOD Cut the veal slices, add salt and pepper. Place a slice of ham and a slice of well-washed and dried sage on each slice of veal, then pierce the items with a wooden toothpick to keep them in place. Flour the veal slices on the meat side. Place a pan large enough to contain all the slices on the stove, melt the butter, add the saltimbocca, and brown only the floured side for a few minutes. Add the white wine and let it evaporate. Place the saltimbocca on a plate and sprinkle them with the cooking juices. MARCA ORO ROSÉ Out of stock Before flavouring the meat with the ham and sage, beat the slices lightly. For an excellent result, flour the slices of meat at the last minute.
